Chicken & ribs

English to French Other Food & Drink Type of meat
This is a restaurant type category in the US.
I was wondering if "ribs" here solely referred to pork ribs (travers de porc) or to other types of meat.

Yes, I believe it does Althugh there's no reason why it mightn't apply also to beef rib steaks, for example, I believe this is in fact referring to a category of food — more or less things that you could almost eat with your fingers, like Kenyucky Fried Chicken, wings, ribs, etc.

Poulet et côtes levées

From experience, when I order ribs in various restaurants in Montreal that have a similar menu as in the U.S., it is translated by "côtes levées". See menu from the restaurant "Bâton Rouge" (available in French and English).
Note from asker:
Etant francophone de France, je suis également d'avis que "côté levée" sera un peu obscur pour le lectorat de l'Hexagone...

En effet, cela dépend à qui l'on s'adresse. "Travers de porc" ne dirait rien au lectorat québecois. Grillade me semble un peu vague. On peut griller n'importe quoi.

poulet et côtes levées

En Amérique du Nord, les restaurants offrant du poulet et des côtes levées (équivalent des travers de porc) sont très nombreux.
