I was wondering if "ribs" here solely referred to pork ribs (travers de porc) or to other types of meat.

En effet, cela dépend à qui l'on s'adresse. "Travers de porc" ne dirait rien au lectorat québecois. Grillade me semble un peu vague. On peut griller n'importe quoi.
